Very Naughty Apple Fritters from Alto Adige

This is the Carnival time in Italy and deep fried sweet goodies (dolci del Carnevale) are everywhere! Even being a bit of a healthy food freak didn’t stop me from making some naughty frittelle. To keep them on the healthy side I added apples as they do in Trentino Alto Adige. Make sure you use sunflower oil as it has higher smoke point compared to olive oil.

Ingredients:

2 apples

100 g white flour

2 eggs

1 tsp bicarbonate soda

120 g milk

1 tbsp sugar

Some cinnamon

Sunflower oil for frying (about 120g or enough to cover the apple rings)

Preparation:

Whisk the eggs, add the milk, flour, soda and sugar. Continuing to whisk the mixture till it is smooth and homogenous. Peel the apples, take the core out and cut thin (5mm or so) round slices. Heat the oil in a pot and when it is ready, gently dip the apple rings in batter and carefully place in oil. Fry till gold. Lay out the fritters on a few layers of kitchen paper to drain the excess oil. Sprinkle them with sugar and cinnamon and serve warm.
